Heidi Paz was the girlfriend of César Román, the subject of the shocking Netflix true-crime documentary Cooking Up Murder: Uncovering The Story Of César Román. Heidi was brutally murdered by Roman, and her remains were eventually discovered in a suitcase.
What Happened to Heidi Paz?
The body of Heidi Paz was found dismembered and hidden in a suitcase. A report from Madrid Metropolitan would reveal that the dismembered corpse was found in a warehouse rented by Cesar Roman.
Heidi had been in a relationship with Cesar Roman, but it was reported that she did not want the relationship to continue, and the two had parted company. However, Heidi had agreed to meet with Cesar on August 5th, 2018, at the home they used to share, possibly hoping for a reconciliation, and that would be the last time anyone would see her alive.
The Relationship with César Román Explained
In April 2018, Cesar Roman was running a cider house in Madrid. Heidi would meet him and before long found herself working for the chef.
It was only a matter of time before the two would become involved with each other romantically, and would move into a house together. However, Heidi would start to doubt the relationship and by June 2018, she felt it was time to leave.
Heidi left Cesar, leaving a note explaining her decision to go, but by August 5th, Heidi would get in touch with Cesar and an arrangement was made for her to come to the home so they could talk.
This would be the last time that Heidi was seen alive.

Murder Timeline
- Heidi and Cesar would meet in April 2018.
- On August 5th, 2018, Heidi met with Cesar at the home they had previously shared. It would be alleged that this was when the murder was committed, with Cesar leaving Madrid, presumably to go to Zaragoza.
- Cesar had rented a warehouse on August 13th, and it was here the body of Heidi would be found, inside a suitcase.
- Using a fake name, Cesar found work in another kitchen, and a manhunt would be launched to find him. It would be three months before he was found by the authorities, who would arrest him in November 2018.
- It would be 2021 before Cesar’s trial resulted in the jury unanimously finding him guilty.
- Madrid Metropolitan would say “Román’s fingerprints (were found) in various places in the warehouse and in addition, police officers found the victim’s mobile phone in Román’s apartment when he was arrested in Zaragoza.”
Where was Heidi Paz from?
Heidi Paz was born in San Pedro Sula, Honduras. The area is known to be a particularly volatile location and unfortunately has a reputation for being violent and dangerous.
Cesar would say in his defense that Heidi had either returned to her native country or had been murdered by an organized drug cartel. The jury would not believe that this was the reason behind Heidi’s death.
